The tools we use and the lessons we learn improve our results. Cooking
is really a process of editing food. There are many ways to achieve
an end result, and the interpretations are personal expressions of a concept. However the best
cooks are usually the best editors. Knowing how to highlight an ingredient, trim the fat (both literally and figuratively), adapt new technologies and ideas, assimilate historical greats,
and understand the processes of preparing food is essential to great cooking. The journey from the top picture to the bottom
demonstrate an approach to editing.
