Steve has re-worked his sake cured roe. Originally the roe was amazing. Now the roe sets a new bar for amazing. He has adjusted his curing process and switched sakes. The cured steelhead eggs have a dry crisp note with the fragrance and character of spring rains. This roe is the way to experience delicious and the beauty of spring in a single bite.
