We have been looking at process and results and have discovered some interesting ways to achieve results. For instance, we used to pressure cook yogurt to caramelize the milk solids and sugars in the yogurt. The results were tasty although we had difficulties with overall smoothness. Today we just add pressure cooked milk solids to yogurt. The results taste amazing with the approach being an evolution of thoughts and refinement.
